Pie-Rats! was written by Lisa Frenkel Riddiough and illustrated by David Mottram. Here is a recipe for our family’s favorite Coconut Milk Peanut Butter Pie. It was inspired by the blog titled “Milk Allergy Mom.”
Crust Ingredients:
2 cups graham cracker crumbs (12 long graham crackers)
4 Tbs brown sugar
1/4 tsp salt
8 Tbs butter, melted
Preheat oven to 325 degrees. Melt butter in a sauce pan over low heat (stirring regularly to prevent browning). In a food processor, process the graham crackers until they become crumbs. Add brown sugar, salt, and butter, and process again.
Using your fingers, press the mixture into the bottom and sides of a pie plate (you can use the flat bottom of a glass to make it even and smooth on the bottom).
Bake for 10 minutes. Important: let the pie crust cool completely.
Filling Ingredients:
1 C creamy peanut butter (conventional peanut butter works best for this recipe)
8 oz of dairy-free cream cheese
1 can coconut milk (full-fat)
2/3 C powdered sugar
In a large bowl, beat the peanut butter and cream cheese until smooth. In a separate bowl, whip together the coconut milk and sugar until frothy.
Pour the whipped coconut milk mixture into the bowl with the peanut butter mixture. With a rubber spatula, fold all the ingredients together by hand until combined.
Scrape the filling into the graham cracker crust. Refrigerate for 6-8 hours.
Once the pie is set, slice into slim slices (it’s very rich) and top with your favorite chocolate syrup and coconut whipped cream!
